While eating low-fat isn’t necessarily the best way to go about losing weight, adding some low-fat recipes to your diet won’t hurt. This Low-Fat Chicken Rice Casserole is delicious and filling and is a great addition to your diet as you chance your eating habits to lose the unwanted weight.

– 1/3 Cup All-Purpose Flour,
– 1 1/2 tsp Salt, 1/8 tsp Pepper,
– 1 Cup Nonfat chicken broth,
– 1 1/2 Cups Skim milk,
– 1 1/2 Cups Cooked Rice (White or Wild),
– 2 Cups Chicken breasts without skin (cooked),
– 4 Ounces Mushrooms
– 1/3 Cup Chopped green bell pepper.

1. First, you heat the oven to 350F.
2. In a large saucepan, you blend flour, salt, and pepper.
3. Then you stir in broth and milk.
4. You need to keep stirring constantly while cooking over low heat until the mixture is smooth and bubbly.
5. Then you bring it to boil and you stir for another 1 minute.
6. Finally you stir in the remaining ingredients.
7. When finished you pour it into a non-greased baking dish (10x6x1.5″), or a 1 1/2-quart casserole. Both will work perfectly.
8. Then you bake it all uncovered for 40 to 45 minutes.
9. Before serving it you can sprinkle with snipped parsley.
